very memorable event.

Living with Purpose

Retirement is a time of life most of us look forward to for many years. We envision relaxing days mixed with daily activities of our own choosing. But what happens a few months after you retire? Once you have had time to enjoy carefree days and are now seeking days with more purposeful activity? How can you go about bringing purpose to your life when you’ve given up working and your family is grown and gone?

Here are some suggestions you might find useful:

Pursue hobbies: Do you enjoy spending time in nature, painting or sculpting? Maybe you like singing with your church choir or playing the guitar? Reconnecting with old hobbies or exploring new ones will help bring meaning to your days.

Support a cause: Knowing someone is counting on you makes life feel more significant. While you probably aren’t looking for a full-time project after you retire, donating a few hours a week to a cause that you believe in is a good way to find purpose.

Follow your heart: Have you wanted to learn how to play the drums or dreamed of writing a screenplay? By following your heart and turning long ignored hopes into reality, you also protect your mental and physical health.

Valentine’s Day

Contrary to popular belief, and what all those Hallmark cards represent, the holiday is not exclusive to couples in love. Why should this International Day of Love be exclusive to only those in a relationship? I think it should be enjoyed by all, the single and the attached.

It’s about showing affection to the VIPs in your life.

Ideas to Celebrate Valentine’s Day

▢ Plan a day trip with your loved ones.

▢ Enjoy a Spa Day with friends.

▢ A picnic in the park.

▢ Bake some treats for your family and friends.

▢ Host a Wine and Movie Night.

▢ A simple phone call or a card to a loved one.

▢ Invite someone for a homemade meal.

However you decide to spend Valentine's Day, remember that spreading love to the ones you care about most shouldn't only be reserved for a few hours each year.

For the salted caramel

▢ 100g granulated sugar

▢ 2 tbsp golden syrup

▢ 30g unsalted butter

▢ 80ml double cream

▢ ½ tsp sea salt

For the mousse

▢ 330g dark chocolate, chopped into small pieces

▢ 30g unsalted butter

▢ 8 eggs, separated

▢ 1 tbsp caster sugar

▢ whipped double cream, to serve

▢ For the salted caramel sauce, place the sugar, two tablespoons water and golden syrup in a saucepan and bring to a boil.

▢ When the sugar has turned a rich amber colour, remove from the heat and stir in the butter, cream and salt.

▢ Pour into a bowl, cover the surface with clingfilm and let it cool.

▢ For the mousse, melt the chocolate and butter in a bowl set over a pan of simmering water - ensuring that the bottom of the bowl does not touch the water.

Set aside to cool a little.

▢ Whisk the egg yolks into the cooled chocolate mixture.

▢ In a separate bowl, whisk the egg whites to a light foam then add the caster sugar and whisk again until soft peaks form

▢ Stir a third of the egg whites into the chocolate mixture.

▢ Carefully fold in the remaining egg whites until well incorporated.

▢ Pour a tablespoon of salted caramel sauce into the bottom of each serving glass. Top with one-third of the mousse mixture.

▢ Drizzle over enough sauce to cover the mousse.
